Together with premier Wagyu producer, David Blackmore, we are proud to present the limited return of the best Wagyu Beef ever produced in Australia.

Blackmore Aizakura K1015 is an outstanding carcass that goes beyond marbling alone. The marbling, meat colour and fat colour all combine together to offer a beautiful piece of meat. The flavour is accentuated through a feeding process that uses natural ingredients to achieve the perfect flavour balance between sweetness and richness.

The proportion of eye muscle size to carcass weight ensures an incredibly high meat yield. The live weight to carcass weight of over 60% (most beef breeds are around 53-54%) shows the unique physical efficiency of this bloodline.

This animal has been the culmination of 29 years of studying and breeding Fullblood Wagyu by David Blackmore who continually strives for perfection. His ultimate goal, ‘to make his worst carcass, as good as his best’.

The Sire (father) of this animal, Blackmore Kikusurukiku H224, is a 100% Tajima bloodline bull. Tajima is the bloodline used in the Hyogo Prefecture in Japan that is used exclusively for the Japanese Kobe Beef brand.

Many promote the Tajima bloodline around the world; however very few have pure 100% Tajima blood cattle, as there were only 1 Tajima female and 8 Tajima bulls ever exported from Japan between 1992 and 1996.

Kinu 1 was the female exported from Japan to the USA in July 1993 and was the daughter of the very famous Kinu cow from the Hyogo Prefecture. The Kinu cow was to be never sold but at the age of 16 and believed to no longer be fertile she was sold to Shogo Takeda. Takeda San was able to get one calf from Kinu, a daughter named Kinu 1.

David Blackmore has traced his 100% Tajima herd back to 1910 to a bull named Nakadoi, and now proudly has more than 50 animals with 100% Tajima bloodlines within the greater Blackmore Wagyu herd.

The Dam (mother) of this animal Blackmore Aizakura H246 can be traced back to Blackmore’s foundation cow, Blackmore Aizakura U100 who has more than 3,000 descendants with her bloodline in them. U100 is a grand old dame who at 18 years of age (born 3rd July 1999) is still alive and living out her life in the house yard of the Blackmore family home.
