Vic’s Premium Quality Meat was established in 1996 by Anthony Puharich, alongside his father, Victor Puharich, a fourth-generation butcher with over 40 years’ experience dedicated the Australian Meat Industry. With Vic’s artisanal butcher skills and Anthony’s passion for produce and keen business acumen, the small business quickly grew and in 1999, Vic's Premium Quality Meat moved to a new purpose-built facility in Mascot.

Anthony Puharich has since established a reputation as one of Australia’s leading butchers and entrepreneurs. With an unmatched understanding of the people and produce that are the backbone of Australia’s meat industry, few people share his depth of knowledge and passion for all things meat.

Vic’s Premium Quality Meat has since grown to become the country’s leading distributor of quality meat, servicing many of Australia’s finest restaurants from its businesses in Sydney and Melbourne. Holding a unique position in the Australian food chain, Vic’s Meat connects the best meat producers in the country with the best chefs.

Riding the wave of success from Vic’s Meat, Anthony embarked on a journey channelling his dreams and visions to create Victor Churchill as a gift and ode to his father and mentor, Victor.

No expense or detail was spared in order to wholeheartedly invest in their dream, whilst ensuring the same founding principles of quality and customer service were priority.

Anthony drew on global influences and inspirations to create, as Anthony Bourdain described it, ‘The most beautiful butcher shop in the world’, setting a new benchmark around the world for meat retailing.

The store opened in August 2009 under conservative expectations, and never did they imagine it would receive as much accolade as it has. Victor Churchill Woollahra won the Best of the Year award at the 2010 International Interior Design Awards held in New York; the first butcher shop to ever be nominated.

This success led to the concept of a brand new retail store. Vic’s Meat Market opened in October 2014; the first and only butcher located at the famous Sydney Fish Market in Pyrmont.

With a well-known reputation for high quality product and great service amongst restaurant diners, it was a natural progression for the business to consider not only supplying restaurants, but to deliver restaurant quality meat to homes nationally. In April 2020, Vic’s Meat Direct was born. A hugely successful online home delivery service.

It has always been a dream to open a second Victor Churchill store in one of the greatest cities in the world. Victor Churchill Melbourne will open its doors in November 2021 in the stunning Heritage listed site of the first and oldest State Savings Bank of Victoria.

Victor Puharich is the single biggest influence and inspiration for Anthony, having dedicated 55 years of his life to mastering his craft of butchery. Anthony will continue to draw on Vic’s humble core values by providing customers with beautiful, ethically sourced meat, and an ongoing dedication to quality and service.
