Farming free-range Aylesbury and Pekin ducks on their 16-hectare property, the Clarkes combine historical breeds with thoughtful farming practices to produce birds of remarkable tenderness and naturally rich taste.
Each duck is lightly brined and finished with Victor Churchill’s signature glaze of brown sugar, maple syrup, and warm spices such as star anise and cinnamon, enhancing its character with balance and depth.
