Trimmed and pin-boned by hand, cured with salt and sugar in small batches, then gently smoked over a bespoke blend of sustainably sourced Australian native woods for a refined and balanced finish.
Slice thinly and serve as a striking centrepiece for your festive table, or enjoy simply with crème fraîche and toasted brioche.
