Each fillet is trimmed and pin-boned by hand, then cured for a week to achieve its delicate texture.
Infused with vodka, brushed with mustard, and finished with garlic, dill, pepper, lemon peel, and celery seeds, it offers a bright, clean flavour with subtle depth.
